Preparation
Step 1
Preheat the oven to 375ºF. Grease a baking sheet with cooking spray.
In the bowl of a stand mixer or in a large bowl add the shortening, butter, peanut butter, brown sugar and 1 cup of sugar and cream together until light and fluffy, about 4 minutes. Add 1 egg at a time until combined then add in the milk. Add the vanilla and mix to combine.
In a separate bowl, add the flour, salt and baking soda and whisk until combined. Add in stages to the creamed mixture until combined. Do not over mix.
Using a small ice cream scoop or a 1-ounce cookie scoop, form the dough into balls. Place the remaining sugar on a plate and roll the balls of dough into the white sugar. Place on the baking sheet and bake for 12-15 minutes.
Remove from the oven to a baking rack and press a chocolate drop candy in the center and each half of the pretzel into the top for reindeer antlers. Press in the eyes. Allow to cool and serve!
Tip: Allow the cookies to cool for 30 seconds-1 minute before placing the chocolate drops in the center to avoid melting the chocolate drops.
