Ingredients
- 1 C butter, (room temperature)
- 2 1/2 C flour
- 1/2 C finely chopped walnuts or pecans
- 3/4 C flaked coconut
- 1 C sugar
- 2 TBLS milk
- 1 tsp rum extract
- 3/4 C finely chopped red and green candied cherries

Step 1
Preheat oven to 375 degrees
In a mixer bowl, cream together butter and sugar.
Blend in milk and rum extract
Stir in flour, candied cherries and pecans.
Form dough into 2 logs about 8 inches long and 2 inches wide, roll in coconut then wrap tightly in plastic wrap. Chill overnight
To bake, make slices 1/4 inch thick, place on ungreased cookie sheet.
Bake for 12 minutes or until edges are golden. (be careful not to burn the coconut)
