Rice Pudding

  • 2/3 cup short grain rice
  • 2 qrt milk
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 5 eggs (at room temp)
  • Cinnamon

Preparation

Step 1

Heat milk over medium heat with salt and sugar, stirring constantly until it comes to a boil. Without lowering heat, add rice. Continue stirring. Cook until rice is soft (about 35 min) Beat eggs until light and foamy. Add vanilla. Remove rice from heat. Fold in egg mixture till well blended. Pour into large casserole or individual serving dishes. Sprinkle with cinnamon. Serve warm, at room temp or cold, depending on preference.
