Peppermint Bark Brownie Cookies

Easy to make brownie cookies with chunks of peppermint bark and an optional sprinkle of crushed peppermint. These cookies are ultra fudgy AND easy to make!

Ingredients

  • 4 oz. full-fat cream cheese (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 - 3.9 oz. instant chocolate fudge pudding mix dry (unprepared)
  • 1/4 cup white flour
  • 1 - 18.3 or 18.4 oz. fudge brownie mix
  • 1 - 3.5 oz Ghirardelli peppermint bark bar
  • 3/4 cup milk chocolate chips
  • 1/3 cup white chocolate chips

Preparation

Step 1

1. Preheat the oven to 350 degrees F.
2. In a large stand mixing bowl, cream together cream cheese and butter until completely smooth (must both be at room temperature; do not melt or soften in the microwave).
3. Beat in large egg and vanilla.
4. Beat in pudding mix (do not prepare), and flour.
5. Beat in fudge brownie mix. (NOTE: Mix will be EXTREMELY thick and it will take a while to get dough to form.)
6. Coarsely chop peppermint bark bar. Stir in the chopped peppermint bark bar (reserve 1/4 or bar to press into the top of baked cookies), chocolate chips, and white chocolate chips.
7. Scoop out cookies using a cookie scoop onto a baking stone or a baking sheet lined with parchment or a silpat liner. (I tend to like smaller cookies, so I made 54 cookies by scooping / flattening bottom of dough in cookie scoop.)
8. Bake for 13-16 minutes. Slightly under-baking these cookies gives them an awesome taste and texture like ultra fudge-y brownies so err on the side of slightly under-baking.)
9. Press a few pieces of the reserved peppermint bark bar onto the tops of the cookies right as they come out of the oven.
