Ingredients
- Cooking spray
- 1 carton Golden Grill Hashbrown potatoes
- Hot water for reconstituting potatoes
- 1 large onion, diced
- 2 Tablespoons olive oil
- 2 cans (4.5 oz. each) chopped green chiles
- 4 eggs
- 1 cup shredded cheddar cheese
- 1 cup minced fresh cilantro
- 2 cups sour cream
- 1 avocado, pitted, peeled, and sliced
- 2 tomatoes, sliced
Preparation
Step 1
Preheat oven to 375. Spray 2 cookie sheets with cooking spray.
Add hot water to to hash brown potatoes and let stand for at least 30 minutes.
Cook onions in oil in large pan until soft. Drain potatoes and chiles and add to onions. Cook, stirring for 10 minutes. Cool slightly.
Beat eggs in large bowl, and stir in cheese and cilantro. When potatoe mixture is cool, stir into eggs. Divide mixture into two cookie sheets and spray lightly with more cooking spray.
Bake for 25 minutes, or until top starts to brown. Let cool for 5 minutes, then serve topped with sour cream alongside avocado and tomatoes.
