  • 1 tbsp unsalted butter
  • 1 medium onion, sliced
  • 6 cups tomato puree
  • 1 tbsp kosher salt
  • 1 cup heavy cream

Preparation

Step 1

in a medium saucepan, melt the butter over medium heat. stir in the onion and cook, stirring occasionally, for 7 minutes
add the tomato puree, stir it into the cooked onions and bring to a boil. Lower the heat and simmer for 10 minutes. Pass thru the fine disc of a food mill and return to the pan.
Heat the soup thru. Season with the salt. stir in the cream.
