Ingredients
- 2 lbs flank steak
- 1 Tbsp olive oil
- 1 Tbsp coarsely ground black pepper
- 1 tsp garlic salt
- 1 tsp onion powder
- 1/4 tsp cayenne pepper
- 3 Tbsp crumbled blue cheese
- 2 Tbsp butter, softened
- 1 tsp fresh chives

Preparation
Step 1
1. Pat steak dry and rub all over with oil. Stir together black pepper, garlic salt, onion powder and cayenne in a bowl, then rub evenly over both sides of steak.
2. Mash cheese with butter in a bowl and stir in chives.
3. Preheat broiler. Line a large rimmed baking sheet with foil and set an oven rack on it. Broil steak 4 inches from heat until an instant-read thermometer inserted in center registers 125F for medium-rare, 3 to 4 min per side.
4. Let rest, loosely covered with foil, 10 to 15 min. Cut steak across grain into thin slices and serve with cheese butter.
