Leek and Potato Soup

  • 2 Bunches of leeks (use white and a speck of light green sliced then)
  • 1 Lg. Onion (sauté in butter until transparent)
  • 5 Sm. cans of Chicken broth.
  • 6 Lg. Potatoes (cubed)
  • 1 Qt. half and half
  • 1 Cup Cheese (shredded)
  • 1/2 Cup Bacon Bits



Step 1

Cook potatoes until soft, take out half the potatoes and put it through the blender. Add all the ingredients together and heat (don't boil)
