Autumn Beef Stew in a Shell

Ingredients

  • 1 pkg. Azteca Salad shells
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 17 oz. can whole kernel corn, well-drained
  • 2-1/4 oz. can sliced ripe olives, drained
  • 3 tomatoes, chopped
  • 1 green pepper, chopped
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 tsp. pepper
  • 4 oz. shredded cheddar cheese

Preparation

Step 1

Bake salad shells as directed on package. In large skillet, brown ground beef, onion and garlic; drain well. Stir in remaining ingredients except cheese. Cook over medium-high heat just until heated through, 3 to 4 minutes, stirring frequently.

Place each baked salad shell on serving plate. Spoon ¼ beef mixture into each baked shell. Top each with ¼ cup cheese. Serve immediately.
