Chicken Fried Rice

Ingredients

  • 6 oz. box long grain and wild rice
  • 1 cup chopped celery
  • 1/4 cup diced onion
  • 2 cups sliced mushrooms
  • 1/4 cup butter
  • 2 cups Schwan’s frozen diced chicken
  • Pepper

Preparation

Step 1

Prepare long grain and wild rice according to package directions, using the seasoning packet. While rice is cooking, saute celery, onion and mushrooms in butter in large saute pan until tender, 5-7 minutes. Add diced chicken. When rice is done, stir into vegetable mixture and fry on medium-high heat for 15-20 minutes, turning every couple minutes. Season with pepper.
