Yellow Squash Casserole

Ingredients
- 4 cups yellow squash, sliced
- 1 t. olive oil
- 1 yellow onion, chopped
- 2 cloves garlic, chopped
- 1/4 cup water
- 1 sleeve Ritz crackers, crumbled
- 1 heaping cup cheddar cheese, grated
- 2 eggs, beaten
- 3/4 cup milk
- 1/4 cup butter, melted
- 1 t. salt
- 1/2 t. pepper
- 2 T. butter

Preparation
Step 1
Preheat oven to 400 degrees.
Heat olive oil over med. heat in large skillet.
Saute onions and garlic for 2-3 minutes.
Add squash on top and pour in the 1/4 cup water. Cover and allow to steam for about 5 min. until squash is tender.
In med bowl, crumble the Ritz crackers. Add in the cheese and toss. Set half this mixture aside.
To the remaining half cracker mixture, add the milk, beaten eggs and melted butter.
Add in the squash mixture and season with salt and pepper. Pour into greased baking dish. Top with remaining cracker mixture and dab with butter (optional).
Bake 25 min until cracker topping is slightly browned,
