Ingredients

  • 4 tbsp butter
  • 1 small onion
  • 1 clove garlic
  • 3 tbsp flour
  • 3 1/2 cups chicken broth
  • 3 cups sliced mushrooms
  • 2 2/3 cups cream
  • 1/4 cup dry white wine
  • Salt and Pepper
  • Grated nutmeg

Preparation

Step 1

Saute onion in butter. Add garlic, stir in flour till blended. About 1 minute. Stir in chicken broth and cook until it boils. Discard garlic. Add wine
Pour 1/2 soup into blender and add 1/2 mushrooms. Blend until smooth. About 6 seconds
Repeat

Add cream and heat. Do not boil
