REESE'S PEANUT BUTTER CUP COOKIES

Ingredients

  • 1-3/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1- 8 ounce bag reese's mini peanut butter cups
  • 18 reese's peanut butter cups, unwrapped

Preparation

Step 1

Preheat oven to 350. Line 2 baking sheets with parchment papers.

Combine the flour, baking soda and salt in a medium bowl, set aside,

In the bowl of a stand mixer, beat butter, peanut butter and sugars, until light and fluffy. Add in the egg and vanilla.

Gradually add in the flour mixture on low speed. Stir until dough forms. Then stir in mini reese's by hand.

Form balls with 2 heaping tablespoon of dough. Gently flatten cookie dough to form a disk shape and place on baking sheet.

Bake for 11 minutes and remove from oven. Press reese peanut butter cup into center of cookie.

Let cool for 10 minutes before transferring to wire racks to cool completely.
