Latke freezing

Step 1

The key to good latkes is to allow them to cool and drain on paper towels and then freeze them on cookie sheets lined with parchment paper. Once they are frozen, stack them with parchment paper in between layers and then put them in plastic bags. Reheat in a single layer on a cookie sheet in a very hot oven.

1. Place the cooked latkes on a baking sheet in a single layer and freeze for several hours.

2. Once frozen, transfer latkes to Ziploc freezer bags and freeze til ready to use.

3. to heat, preheat oven to 350* F and place latkes in a single layer on a baking sheet. Heat for about 10-15 minutes, til hot.
