Ingredients
- Mayonnaise
- 8 egg yolks
- 2 tbsp vinegar
- 2 tsp salt
- 2 tsp dry mustard
- pinch cayenne pepper
- 31/4 pints oil
- 4 tbsp vingar
- 3-4 tbsp lemon juice
- Dressing
- 6 oz half and half cream
- 11/2 cup mayonnaise
- 7 oz white vinegar
- 11/2 cups sugar
- 1/2 tsp chicken seasoning
- Mix
- 1 head cabbage, shredded
- 1/4 cup carrots, shredded
- 1/4 cup red cabbage, shredded
- 1/4 cup onion, shredded
- 1/4 cup diced green pepper

Preparation
Step 1
Mayonnaise
Place the egg yolks into the bowl of a mixer and beat with whip attachment till well beaten. Add vinegar and beat, mix together dry ingredients and add to the bowl. Beat till well mixed.
Turn the mixer to high speed, Drop by Drop, add oil. When the emulsion forms, you can add the oil in slightly faster. When it becomes thick, add in a little vinegar. Very gradually, beat in remaining oil alternately with the vinegar. Adjust seasonings, adding in a little lemon juices just for taste.
Dressing
Mix and chill
Mix
Cover with enough dressing to coat, mix well, Adjust seasonings, with salt and pepper to taste.
