Creamy Potato and Pea Salad

Ingredients
- 2 lbs. Red Potatoes
- 1/2 Cup Frozen Peas
- 3/4 Cup Reduced Fat Mayonnaise
- 1 Tbs. Mustard
- 1 Tbs. Apple Cider Vinegar
- 1 Tbs. Tarragon
- 1/2 tsp. Salt
- 1/4 Cup Chopped Red Onion

Step 1
In a pot over high heat, combine potatoes and enough salted water to cover. Bring to a boil, reduce heat and simmer until potatoes are just tender, 20-25 minutes. About 2 minutes before potatoes are done, add the peas. Drain potatoes and peas; cool to room temperature. Cut potatoes into wedges. In a large bowl, combine mayonnaise, mustard, vinegar, tarragon and salt. Stir in potatoes, peas, and onion until coated. Chill 1 hour or until ready to serve.
