Arlene's Muffins

When I first met Arlene and Clarence Bullock it was becauseI went horseback riding there and we became friends. Les later had a horse stabled there when we married and he rode when we came up to New Jersey. Arlene would make these muffins and everyone would enjoy them. They had people coming and going in their house, and this was a low cost goody for them to share.

Ingredients

• 1 egg
• 1 cup milk
• 1/4 cups oil
• 2 cups flour
• 3 teaspoons baking powder
• 1 teaspoon salt
• 1/3 cup sugar

Preparation

Step 1

Heat oven to 400 degrees

grease a 12 portion cupcake pan

mis egg, milk and oil

add flour baking powder and salt and sugar just until everything is combined.

do not overmix.

bake for about 25 minutes in oven

serve with jelly, butter

you can add blueberries or whatever to the mix before baking
