Dumplings (Belly Bombs)

This is a recipe from Marjorie Guthrie. The whole family would get so excited that she was making stewed chicken with gravy and these "belly bombs". So it was with great anticipation that I sat down to have dinner with my future in-laws. I had one dumpling. It was dry, and not very tasty. I thought they were all crazy. But I guess they grew on me. Now I make them to sop up the delicious gravy from the chicken. Enjoy!! PS. Marjorie only used 1/4 tsp. baking powder and the dumplings were much more firm. When you increase the amount of baking powder, they become lighter. So make them to your taste.

Ingredients

  • 4 packages of Uneeda Biscuits
  • (they used to be about .60 cents a box, now they are about $3.00)
  • 1 stick of melted butter
  • 1 1/2 tsp salt
  • 3 eggs, well beaten
  • 1/4 cup parsley flakes
  • 1 teaspoon baking powder
  • milk

Preparation

Step 1

Crush the uneeda biscuits. You can use a rolling pin with the biscuits in a plastic bag, or use the blender.

Add the salt, baking powder, parsley and melted butter.

Mix and then add the eggs.

You add the milk last. You add enough to get the mixture to stick together. It varies from about 1 cup and 1 1/2 cups. So add slowly and mix.

When it sticks together, you make small balls about the size of a large walnut.

Have a pot of salted water boiling on the stove. Put about a third of the balls in the water at a time. They will float to the top and you can time them from when they float for about 5-8 minutes. It depends on the size of the balls you made.

When you think they are done, take one out and cut it open. It should be dry inside.

Finish cooking the rest, put in a bowl and serve with lots of chicken gravy.
