Ingredients

  • 1 1/2 cups chopped toasted pecans - divided
  • 1 cup sugar
  • 1 cup butter
  • 1 tablespoon light corn syrup
  • 1/4 cup water
  • 1 cup semi-sweet chocolate chips

Step 1

Spread 1 cup of pecans into a 9" circle on a lightly greased baking sheet. I usually just spray it with Pam.

Bring sugar & next 3 ingredients to a boil in a heavy saucepan over medium heat, stirring constantly. Cook until mixture is golden brown & a candy thermometer registers 290 - 310 degrees (about 15 minutes). Pour mixture over pecans on baking sheet.

Sprinkle with chocolate chips & let stand for 30 seconds. Spread melted chips evenly over top. Sprinkle with 1/2 cup pecans. Chill 1 hour or until chocolate sets. Break into bite size pieces. Store in airtight container. Makes 1 1/2 lbs.
