Step 1
Peel and cut up root, placing in a mini food processor.
Process until you don't hear any chunks being tossed around by the blades. Once you start processing the root enzymes kick in and the longer its processed the hotter it gets. Adding a few drops of vinegar into the food processor right near the end stops the enzyme action and sets the taste of the horseradish.
Will keep in refrigerator for about a year and in freezer for about an eternity.
