Ingredients
- Pie:
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2/3 cup unsalted butter (softened)
- 1/2 cup peanut butter
- 1/3 cup sugar
- 2/3 cup brown sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- Cream cheese filling:
- 8 oz cream cheese (softened)
- 1/3 cup powdered sugar
- 1 egg (room temperature)
- 1/2 tsp vanilla extract
- Toppings:
- 1/3 cup mini chocolate chips
- 20-30 mini Reese's peanut butter cups (chopped & divided in half)
Preparation
Step 1
In medium mixing bowl, mix flour, baking soda, and salt.
In large mixing bowl, beat butter, peanut butter and sugars until smooth. Add egg & vanilla extract. Combine well. Gradually blend in the flour mixture.
In medium bowl, beat cream cheese, egg, powdered sugar, and vanilla until smooth.
Spread 2/3 of the cookie dough in the bottom of 8x8 baking dish, or pie pan . Add half of the Reese's peanut butter cups. Spread cream cheese mixture over top. Crumble remaining cookie dough on top. Add remaining peanut butter cups and chocolate chips. Cover with foil. Bake @ 325 degrees 20 minutes. Remove foil, bake additional 20-25 minutes until browned and cheese layer is set.
