Pulled pork

Ingredients

  • 2 onions, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 1 cup chicken stock
  • 1 tbsp packed brown sugar
  • 1 tbsp chili powder
  • 1 tbsp kosher salt, plus more if needed
  • 1/2 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • pork shoulder or tenderloin
  • 2 cups BBQ sauce (optional)

Preparation

Step 1

place onions and garlic in an even layer in the slow cooker and poor in the broth.
Combine the sugar, chili powder, measured salt, cumin, and cinnamon in a small bowl. pat the pork dry. rub the spice mix all over the pork and place the meat on top of the onions and garlic. cover and cook until the pork is fork tender. 6-8 hrs
turn off the slow cooker and remove the pork. strain the onion mixture, keeping the liquid and return the onions to the cooker, setting the strained liquid aside.
shred the meat, return to cooker. add the BBQ sauce and mix to combine. add the strains liquid a little at a time until the pork is moistened. taste and season with salt as needed.
