Zucchini Cakes

Ingredients

  • 1 1/2 lb zucchini, grated
  • 1/2 tsp kosher salt
  • 1 large egg
  • 1/4 cup all-purpose Four
  • 3 Tbsp chives,finely chopped
  • 1 Tbsp cornstarch
  • 1/3 cup vegetable Oil

Preparation

Step 1

Set your grated zucchini in a colander and toss with the kosher salt. Let the zucchini rest in the colander over the sink for at least 10 minutes. Periodically press down on the zucchini with a wooden spoon to release more moisture. Once it has drained for 10 minutes, remove it from the colander and wrap in paper towels; wring out any moisture.

Set the zucchini in a large mixing bowl along with the egg, flour, chives, and cornstarch. Season with salt and pepper and stir to combine.

Heat the oil in a large skillet over medium heat. Work in batches to cook your fritters. Mold them using ¼ cup of the zucchini mixture. Flatten the scoops before carefully placing them in the oil to cook for three minutes each side. Remove from the oil and let drain on a stack of paper towels.
