Ingredients
- 2 Tbsp olive oil
- 3 Tbsp green onion, minced
- 2 Cups white rice, uncooked
- 2 1/2 Cups chicken broth
- 1 Cup salsa
- 1 Cup corn
Preparation
Step 1
Saute green onion in olive oil. Mix in rice and stir a few minutes until brown. Add chicken broth, salsa, and corn. Simmer 20 minutes.
