Ingredients
- 2 medium butternut squash (about 1 pound each)
- 1/4 cup butter or margarine
- 3 Tbsp brown sugar
- 1 tsp ground ginger
- 1 Tbsp grated orange rind
- 1/4 tsp freshly grated nutmeg, plus extra for garnish
- 1 cup whipping cream
Preparation
Step 1
Pare squash and cut into 1 1/2" cubes. Cook squash uncovered in boiling salted water just until tender, about 5 minutes.
In a large skillet over low heat, melt butter, add brown sugar. Stir until sugar is dissolved, about 2 minutes. Add squash, ginger, orange rind and nutmeg.
Cook until squash is coated with sugar mixture, about 3 minutes. Stir in cream. Cook over medium heat, stirring constantly, until sauce thickens, about 5 minutes.
Sprinkle with freshly grated nutmeg and serve.
