Brownie Batter Chocolate Chip Cheesecakes

Miniature cheesecakes get a chocolate twist from a brownie mix and chocolate chips.

Ingredients

  • 1 1/2 cups Oreo crumbs
  • 2 cream cheese, softened (8 oz. each)
  • 1/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup dry brownie mix
  • 1/2 cup mini chocolate chips
  • 1 cup Cool Whip

Preparation

Step 1

Place a small spoonful of crumbs in the bottom of mini muffin liners and set aside.
Beat the cream cheese and sugar until creamy. Add the eggs and vanilla and cream again. Stir in the dry brownie mix and mix again. Stir in the chocolate chips by hand. Place a small spoonful into each prepared mini muffin liner. Fill the liners almost to the top. Bake at 350* for 17 minutes. let cool completely. Top with Cool Whip and sprinkles just before serving. Keep refrigerated. Makes about 48 mini cheesecakes.
Notes

You could also bake these in a regular muffin tin by increasing the bake time to around 25 minutes.
