Triple Chocolate Cheesecakes

Mini chocolate cheesecakes with a chocolate mousse and chocolate chips...for the serious chocolate lover.

Ingredients
- For the Cheesecake
- 2 (8 oz. each) packages cream cheese, softened
- 1/2 c. sugar
- 2 eggs
- 2 Tbsp. sour cream
- 1 tsp. vanilla
- 3/4 c. chocolate chips, melted
- oreo cookies
- For the Mousse
- 1 (8 oz.) package cream cheese, softened
- 1 (8 oz.) tub Cool Whip, thawed
- 1/2 c. chocolate chips, melted
- mini chocolate chips, for top
Preparation
Step 1
For the Cheesecake
1.Preheat oven to 350* Line cupcake pan with liners and drop an oreo into the bottom of each. Beat the cream cheese and sugar until creamy.
2.Add the eggs, sour cream, vanilla and beat until fluffy. Melt the chocolate chips in a microwave safe bowl for about a minute, stirring often. Slowly beat the chocolate into the cheesecake mixture. Fill each liner 2/3 full. Bake 20 minutes.
3.Cool in pan for about 15 minutes, then remove to wire rack to cool completely. Top with a large spoonful of chocolate cheesecake mousse and sprinkle with mini chocolate chips. Refrigerate.
For the Mousse
4.Beat cream cheese until creamy. Slowly beat in melted chocolate chips until incorporated. Fold in cool whip carefully.
