Pumplin Pecan Tartlets - Weight Watchers

This is a very easy thing to put together, and though it is not as sweet as pumpkin pie, it gets thumbs up reviews from kids. I think Weight Watchers gives this 4 points.

Ingredients

  • cooking spray
  • 15 oz pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup low-fat milk
  • 1 large egg
  • 1-1/2 teaspoon pumpkin pie spice
  • 1 teaspoon fresh minced ginger
  • 1/2 teaspoon table salt
  • 2 Tablespoons chopped pecans
  • 24 wonton wrappers

Preparation

Step 1

Preheat the oven to 375º F. Coat a 12-cup muffin tin (standard size) with cooking spray.

In a large bowl, using an electric mixer, beat together the pumpkin, sugar, milk, egg, pumpkin pie spice, ginger, and salt.

Place a wonton wrapper in the bottom of each repared muffin cup, allowing its corners to stick up straight; lightly coat the wontons with cooking spray (I skipped that step). Place a second wonton in each muffin cup, perpendicular to the first, so that each muffin cup has 8 wonton wrapper corners sticking up.

Evenly divide the filling among the muffin cups; smooth the filling with the back of a spoon, and sprinkle with pecans. Bake until the wontons are crispy and browned, 13-17 minutes. . . start checking after 3-4 minutes to see if the edges of the tartlets start to burn. If they do, cover the pan loosely with foil and continue baking until the filling is set.

(Ours took 20 minutes; we covered the pan after about 13 minutes.)
