  • 1 lg fennel bulb, trimmed and thinly sliced
  • 2 medium oranges, peeled and sectioned
  • 1 Tbl olive oil
  • 1 Tbl red wine vinegar
  • salt and fresh ground black pepper
  • 2 Tbls sweetened dried cranberries

Step 1

Place sliced fennel in a salad bowl, add oranges; drizzle with olive oil, red wine vinegar, salt and pepper.

Toss to coat, top with cranberries and serve
