Ingredients

  • 3 Tb olive or canola oil
  • 1/2 onion, chopped
  • 4 garlic cloves, minced
  • 1.5 c long grain white rice
  • 1 c chunky salsa
  • 2 c chicken broth
  • chopped fresh cilantro
  • lime for garnish

Preparation

Step 1

1. In large pan, heat oil over medium heat. Add onions and garlic, stirring and cooking until tender.
2. Add rice and stir for 2 minutes. Stir in salsa and mix well.
3. Add broth and bring to a boil. Cover and reduce heat to simmer and simmer for 25min.
4. Let rice rest covered for 15min.
5. Fluff with fork and salt/pepper to taste.
6. Serve with cilantro and lime.
