Peanut Brittle - Microwave Style

Peanut brittle is easy to make in your microwave! And, is so much tastier than store bought.
Ingredients
- 1 cup white sugar
- 1/2 cup white corn syrup
- 1 cup raw, unsalted peanuts
- 1 teaspoon salt
- 1 tablespoon vanilla extract
- 1 tablespoon butter (additional butter for baking pan)
- 1 teaspoon baking soda

Step 1
Equipment: 8-cup, glass measuring cup; metal baking pan; wooden spoon
Butter a metal baking pan, set aside
Mix sugar and corn syrup together in measuring cup (wooden spoon can be left in during cooking). Cook on HI power for 3 min 50 sec
Add raw peanuts and salt. Mix. Cook on Hi power for 3 min 50 sec
Add butter and vanilla. Stir. Cook in microwave on Hi power for 1 min 20 sec (the longer you cook this stage the darker the brittle will be)
Add baking soda. Mix thoroughly. As soon as mixture begins to foam, pour onto prepared baking sheet and scrape bowl with rubber spatula. This step needs to be done very quickly because the brittle will begin to set immediately.
Cool completely before breaking (30-60 minutes)
Hold baking sheet about 6 inches above counter and drop. Do not drop more than once; it will result in crumbs. Break brittle into bite sized pieces.
