Crockpot Corn Chowder

Ingredients

  • 6 potatoes, peeled & diced
  • 1 can (14 3/4 oz) cream of corn
  • 1 can (15.25 oz) whole kernel corn
  • 2 cups low sodium chicken broth
  • 8 oz. diced pancetta
  • 1 large onion, diced
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 1/4 cup unsalted butter
  • 2 cups half and half

Preparation

Step 1

Place potatoes, cream of corn, corn kernels, chicken broth, pancetta, and onion into the insert of your crockpot, stir to mix well.

Cook on low for 7 hours, or until potatoes are nice and fork tender.

Before serving, add in the butter and stir in the half and half. Cook for an additional 30 minutes then serve!
