Ingredients
- Salad:
- 8 cups romaine lettuce, large chopped
- 1 cup celery, medium dice
- 1 Granny Smith apple, peeled, cored, and medium dice
- 1/2 cup toasted pecans, rough chopped
- 1/2 cup dried cranberries
- 2 heads Belgium endive, cored and medium dice
- 1 cup turkey meat, cooked and diced
- 1/2 cup blue cheese crumbles
- Dressing:
- 1/4 cup olive oil
- 2 Tbsp apple cider vinegar
- 2 Tbsp pure maple syrup
- 1-1/2 Tbsp Dijon mustard
- 1 Tbsp shallot, minced
- 1 tsp salt
- 1/2 tsp pepper

Preparation:
To prepare the salad, add the romaine, celery, apple, pecans, cranberries, endive, turkey, and blue cheese to a large mixing bowl.
To prepare the dressing, whisk together the olive oil, cider vinegar, maple syrup, mustard, shallot, salt, and pepper in a small mixing bowl.
To assemble the dish, pour the dressing over the salad and toss to coat.
