Ingredients

  • 4 slices of calf s liver flour for coating
  • 1 tbsp olive oil
  • 1/2 lb good liver
  • 2 tbsp of butter
  • 4 ounce of lean bacon slices cut into narrow strips
  • 1 garlic clove crushed
  • 1 onion chopped
  • 1 celery stalk thinly sliced
  • 2/3 cup red wine
  • 1 tsp chopped sage or 1/2 tsp dried
  • 2/3 cup beef stock
  • 1 good pinch of ground allspice
  • 1 tsp Worcestershire sauce
  • 3-4 tomatoes peeled quartered and de-seeded
  • salt and pepper

Preparation

Step 1

Wipe the liver with paper towels season with salt and pepper coat lightly in flour, shaking off any excess
Heat oil and butter in pan and fry liver until well sealed on both sides
remove from pan,cover and keep warm
Add the bacon with the garlic,onion,and celery and fry gently till soft
Add the wine, beef stock, allspice, and Worcestershire sauce,sage, salt and pepper
Bring to boil and simmer for 3-4 minutes
Cut tomatoes in half and add to sauce,
Continue to cook for 2-3 minutes
Spoon sauce over liver and serve.
