Seafood/Thai Curried Salmon

Ingredients

  • 2 tsp vegetable oil
  • 1 cup thinly sliced scallions
  • 3 tsp curry powder
  • 1 1/2 cup coconut milk
  • 2 tbsp sugar
  • 1 tbsp lime juice
  • 1 tbsp fresh gingerrrot, peeled and minced
  • 1 tbsp fish sauce
  • 2 garlic cloves, minced
  • 1 # poached salmon filet, skinned and cut into 3/4" cubes
  • Rice or Asian noodles
  • Cilantro for garnish

Preparation

Step 1

In a large skillet over medium-high heat, heat vegetable oil. Add onion and curry powder; saute 4 minutes. Add coconut milk, sugar, lime juice, ginger root, fish sauce and garlic. Bring mixture to a boil; reduce heat and simmer for 3 minutes. Add salmon; cover and cook for 4 minutes. Stir salmon mixture and cook for an additional 4 minutes. Serve over noodles and garnish with cilantro.
