Ingredients
- 25 lbs. lean meat
- 1 lb. of jerky premix
- 2 tbsp. prague powder
- 2 tbsp. FOS B or Raphos 2000
- 1/2 quart water
- 1 tbsp. jerky spice per lb. of meat
- 1/4 tsp. prague powder per lb. of meat

Step 1
mix the above ingredients. Regrind 2 times. Stuff on to racks. Air dry overnight. Turn each strip over and cook at 180 degrees F. for approx. 3 hours. Smoke may be added for one last hour.
