Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup mashed cooked pumpkin
  • 1 tsp lemon juice
  • 3/4 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup chopped pecans
  • 2 tbsp powdered sugar
  • 1/2 pkg cream cheese
  • 1/4 cup butter
  • 1/2 cup sifted, powdered sugar
  • 1 tsp vanilla

Preparation

Step 1

1. Preheat oven to 375 degrees
2. Spray a 15x10 jellyroll pan
3. Beat eggs until thick.
4. Gradually add 1 cup sugar, beat for 5 min.
5. Stir in pumpkin and lemon juice.
6. Combine flour and next 5 ingredients.
7. Gradually add pumpkin mixture.
8. Spread butter evenly in pan, sprinkle with 1 cup pecans, gently pressing into batter.
9. Bake at 375 for 12- 15 min.
10. Sift 1-22 tbsp powdered sugar in a 15x10 in rectangle on a cloth towel.
11. When cake is done, immediately loosen from sides of pan, and turn out to sugared towel.
12. Roll up cake and towel together, cool.
13. Beat cream cheese and butter.
14. Add powdered sugar and vanilla.
15. Unroll cake, spread w/ mixture and carefully re-roll.
