Ingredients
- 4 sticks butter, room temp
- 3 C sugar
- 6 lg eggs, room temp
- 4 C flour
- 1/2 C fresh key lime juice
- 1/4 C evaporated milk
- 4 t key lime zest
- 1 t van x
- Key Lime Icing
- 8 oz cream cheese, room temp
- 3-4 T butter, room temp
- 4 C 10x sugar
- 1/4 C freshly squeezed key lime juice
- 2-3 t key lime zest
- 1 t van x

Preparation
Step 1
Preheat oven to 300. Spray tube pan with PAM. Mix butter & sugar. Add eggs, one at a time. In separate bowl, mix lime juice, milk, zest & van x. Add flour to butter/sugar mix, alternating with juice/milk mix. Mix til incorporated, do not over mix. (Cake will be tough). Bake in prepared pan for 1 hour, 45 mins or until toothpick comes out clean.
Cool in pan for 15-20 mins before removing from pan & cooling completely on wire rack.
For Icing:
Mix cream cheese & butter. Add 10x sugar, mix. Add juice, zest & van x. Mix well. Ice cooled cake. Enjoy!
