Make Ahead Mashed Potatoes

Probably the best and easiest recipe for holiday mashed potatoes you can find. an be prepared the night before an event then all you do is turn the crockpot on the day of! Creamy and tasty, a real crowd pleaser.

Ingredients

  • 8 medium potatoes
  • 1 C sour cream
  • 8 oz block of cream cheese
  • 4 Tbls butter
  • 1/4 C chives
  • 1 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1 1/2 tsp onion powder
  • 2 garlic cloves - minced
  • 1 pinch marjoram (optional)
  • milk
  • bacon bits
  • paprika
  • 1/2 to 1 C thinly sliced green onions

Preparation

Step 1

Peel, cut and boil potatoes until tender, then drain in a colonder.

Beat softened cream cheese and sour cream in a mixing bowl until well blended.

Add hot potatoes, beat until smooth adding small amounts of milk as needed.

Add butter, chives, salt, pepper and onion powder and beat until well mixed.

Add garlic, green onion and marjoram. Mix well.

Pour into crockpot, on low setting for 2 - 3 hours (add a couple extra tablespoons of butter)

in a casserole dish - bake at 350 degrees for 25 minutes.

NOTE:
If you make this dish the night before for the crock pot, keep in the fridge until you re ready to turn the crockpot on - stir well add a couple tablespoons of butter.
