Blueberry Tarts (or any berry)

Ingredients

  • 24 baked and cooked tart shells
  • 3 cups fresh berries
  • 2 Tbsp cornstarch
  • 2 tsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 2/3 cup sugar
  • pinch of salt

Preparation

Step 1

Preheat oven to 375 degrees

-Bring 1/4 cup water and 1 cup berries to a boil
-Simmer until berries start to break down. 3-4 minutes
-Mix cornstarch with 2 Tbsp water
-Stir into berries
-Add lemon, sugar and salt
-Bring to a boil and then reduce heat
-Simmer for 30-60 seconds or until thickened
-Remove from heat and stir in remaining berries
-Pour into cooled tart shells
