This recipe can also be used for dinner rolls. (minus the cinnamon)

Ingredients

  • Filling:
  • Rolls: (pastry part)
  • 3 (.25) packets active dry yeast
  • 1 3/4 C warm water
  • 1/2 C honey
  • 1/2 C melted butter, plus more for brushing
  • 2 tsp salt, plus more for sprinkling
  • 2 lg beaten eggs
  • 4 to 6 C flour, more if needed
  • 4 Tbls butter, unsalted and soft
  • 3/4 C pecans, chopped
  • 6 Tbls dark brown sugar
  • 1 Tbl cinnamon
  • Cream Cheese Glaze:
  • 1 C powdered sugar
  • 1/2 C cream cheese, softened (4 oz)
  • 4 Tbls butter, unsalted and soft
  • 1 tsp vanilla
  • 4 Tbls milk
  • melted butter for bushing

Step 1

Preheat oven to 400 degrees.

In a mixer bowl with the paddle attachment combine yeast and warm water. Let activate for 5 minutes, until bubbly. Stir in honey.

On low speed, add 1/2 C melted butter, 2 tsp salt and eggs.

Slowly add flour, cup by cup until fully incorporated and the dough pulls away from the sides of the bowl. (Add more flour if it's to sticky).

After the dough comes together, turn out on a well floured surface. Using a lightly floured rolling pin, roll out the dough to a 11 X 15 inch rectangle.

In a mixing bowl, add pecans, brown sugar and cinnamon, mix well.

Spread the softened butter on the dough leaving a 1/2 inch border.

Sprinkle the cinnamon mixture evenly over the dough.

Starting with the long side, roll up the dough tightly and evenly ending with the seam side down.

Cut 10 slices, each about 1/2 inch thick. Place in two 9 X 13 greased baking dishes and cover with a towel. Allow to rise in a warm environment for an additional 15 to 20 minutes. Brush with butter before baking.

Bake until tops are browned, about 20 - 30 minutes.
Remove from oven and brush with more melted butter and cool on a rack.
Drizzle with prepared cream cheese glaze if desired.

GLAZE:
In a mixing bowl, combine the powdered sugar, cream cheese, butter, milk, and vanilla. Drizzle over the rolls.

For dinner rolls: (dough can be forms and frozen ahead of time for rolls).
Portion the dough into 24 even servings. Form the rolls into desired shape and place in a cast iron skillet or on a baking sheet spaced evenly apart. Set aside and allow to rise approximately 20 minutes, or until doubled in size. Brush the rolls with melted butter.

Bake for 25 minutes until the tops are golden brown. Remove from the oven and brush with more melted butter, and sprinkle with a little salt.
