Tart cranberries paired with sweet oranges creates a flavorful grain-free rendition of a traditional favorite. Try this bread during the holidays, when fresh cranberries are in season. From the cookbook, Nourishing Meals: 365 Whole Foods, Allergy-Free Recipes for Healing Your Family One Meal at a Time by Alissa Segersten & Tom Malterre.
Directions:
Preheat the oven to 350°F. Grease an 8 ½ by 4 ½ inch glass loaf pan with coconut oil.

In a large bowl, whisk together the dry ingredients. In a small bowl, whisk together the wet ingredients. Pour the wet ingredients into the dry, and whisk together until combined. Fold in the cranberries.

Pour the batter into the loaf pan and bake for 50 to 60 minutes. Remove from the oven and let cool in the pan for about 20 minutes, then invert onto a wire rack to completely cool.

NOTE from website:
I’ve always loved Ali’s food – she stays close to nature and infuses health into everything she creates. I’m always happy with every recipe I’ve ever made of hers. And Ali has a really wide breadth of cooking experience – when you pick up one of her books you can find everything from raw salads to roasted chicken to flavorful bean dishes and healthy dessert recipes.
You know me – I go right to the dessert and baked goods. That’s my thing. If it was up to me, I’d let someone else cook dinner every night of the week. But I can always trust Ali’s cookbooks to have healthy, simple meals that can be put together without a lot of time in the kitchen like her Sweet Potato Falafels. She’s also got more complex dishes if that’s what you’re looking for, such as Roasted Whole Chicken with Root Vegetables and Chia Dinner Rolls. And, Ali is a mom so she’s got a slew of kid-friendly recipes.  My kids love her Peanut Butter Monster Cookies.
