Mini Pumpkin Cranberry Breads

Ingredients

  • 3 cups flour
  • 1 tbp. + 2 tsp. pumpkin pie spice
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 3 cup sugar
  • 1 can (15oz) 100% pure pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup orange juice
  • 1 cup dried cranberries

Preparation

Step 1

Mix flour, baking soda & salt in large bowl.

Combine sugar, pumpkin, eggs, oil & juice & beat just until blended.

Add pumpkin mixture to flour mixture; stir just until moistened.

Fold in cranberries.

Spoon into 5 greased & flour 5 x 3 loaf pans.

Bake t 350 for 50 to 55 minutes.
