Sugar Cookie Fruit Pizzas

THE COOKIES USED FOR THIS RECIPE IS GRANDMA'S SOFT SUGAR COOKIE

Ingredients
- Cookies - Recipe HERE or purchase store bought
- Cream Cheese Spread
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 3/4 cup COOL WHIP whipped topping
- Fruit Topping
- Strawberries, Kiwi, Blueberries or any other fruit you like
- Glaze
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/2 cup unsweetened pineapple juice or orange juice
- 1/4 cup water
- 2 tablespoons lemon juice
Preparation
Step 1
Bake cookies and cool
Cream Cheese Spread
In a mixing bowl, beat cream cheese and powdered sugar until smooth
Fold in whipped topping, set aside
Glaze
In a small saucepan, combine all glaze ingredients, bring to boil and cook for 2 minutes, stirring constantly until thickened
Pour into small bowl and place in fridge until cooled but not set
Assemble Sugar Cookie Fruit Pizzas
Spread each cookie with cream cheese spread, top with fruit and drizzle with glaze
Refrigerate for 1 hour or until chilled
Notes
The recipe for the Cream Cheese Spread and Glaze is enough for 12-18 cookies, it can easily be doubled. Original recipe from Taste of Home
