Thelma grew up with this sweet treat and she passed her love for it on down to her children and grandchildren. When I first heard of this I was skeptical, but in no time as I a fan.

- 1 small potato
- peanut butter
- powdered sugar

Preparation
Step 1
Cut potato into fourths and cook in water till soft. In a medium bowl, start with a small piece of potato and about 1 cup of pd. sugar. Mix with a fork, adding more potato and pd. sugar, till you get a soft dough. Dust a cutting board with pd. sugar, put dough on top and roll out into a flat rectangle, fairly thin. Spread peanut butter over dough, fold up, jelly roll style. Slice into about 1/4" thick pieces. Store in covered container.
