Cranberry Orange Scones

Ingredients

  • 2 C all purpose flour
  • 10 tsp sugar - divided
  • 1 Tbl grated orange peel
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/3 C unsalted COLD butter, cut in cubes
  • 1 C dried cranberries
  • 1/4 C orange juice
  • 1/4 C half and half cream
  • 1 egg, room temperature, lightly beaten
  • 1 Tbl milk

Preparation

Step 1

Heat oven to 400 degrees

In a bowl. combine the 7 teaspoons of sugar, orange peel, baking powder, salt , flour and baking soda.

Cut in butter until mixture resembles coarse crumbs, set aside.

In a small bowl, combine cranberries, orange juice, cream and egg. Add to flour mixture and stir until a soft dough forms.

Turn out on a floured surface, gently knead 6 to 8 times. Pat dough into an 8 inch circle, cut into 10 wedges.

Separate wedges and place on an ungreased baking sheet. Brush with milk, sprinkle with remaining sugar.

Bake for 12 - 15 minutes or until lightly browned.

Serve warm if desired with orange butter:
Blend 1/2 C softened butter with 2 to 3 tablespoons orange marmalade
