Ingredients

  • 1 cup roasted corn kernels
  • 1/2 cup finely diced roasted red bell pepper
  • 1 tablespoon finely diced red onion
  • 1 1/2 tablespoons balsamic vinegar
  • 1 1/2 tablespoons coarsely chopped cilantro
  • 1/2 jalapeño, minced
  • 1 1/2 tablespoon olive oil
  • Salt and freshly ground pepper

Preparation

Step 1

Combine the corn, pepper, onion, vinegar, cilantro, jalapeño, and oil in a bowl and season to taste with sale and pepper. May be refrigerated, covered, for up to 1 day.

Makes about 2 1/2 cups
