    cup roasted corn kernels

  • ½

    cup finely diced roasted red bell pepper

  • 1

    tablespoon finely diced red onion

  • tablespoons balsamic vinegar

  • tablespoons coarsely chopped cilantro

  • ½

    jalapeño, minced

  • tablespoon olive oil

  • Salt and freshly ground pepper

Directions

Combine the corn, pepper, onion, vinegar, cilantro, jalapeño, and oil in a bowl and season to taste with sale and pepper. May be refrigerated, covered, for up to 1 day. Makes about 2 1/2 cups
