Raisin-Nut Cookies

  • 1 lb butter
  • 11/2 cups sugar
  • 6 eggs
  • 1 large box raisins
  • 1/2 tsp baking powder
  • 6 cups flour
  • 1/2 tsp salt
  • 21/2 cups chopped walnuts

Step 1

Bake 375* 20-25 minutes

Boil raisins in 2 cups water til puffy. Separate raisins from water and add 1/2 tsp baking soda. Butter mixture: Cream butter til smooth. Stir in 11/2 cups sugar and add eggs. Flour mixture: Add 1/2 tsp salt and 1/2 tsp baking powder to 6 cups flour. In a large bowl add butter mixture with 1/4 flour mixture and blend well, repeat blending well til combined. Then add 1/4 raisin water and blend well, repeat blending well til combined. Mixture should be fairly stiff. Add extra flour if necessary. Add raisins and nuts and mix. Drop spoonfuls (icecream scoop) of dough onto greased cookie sheet.
