Ingredients

  • 1 stick butter, room temperature
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 3 eggs, room temperature
  • 1/2 cup cocoa powder
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 1 package mini chocolate chips, 10 ounces
  • 1 package mini toffee, skors

Preparation

Step 1

Mix the cocoa powder, flour, baking powder, and salt in a bowl and whisk to combine.

Beat the butter and sugar for 2-3 minutes until the butter is light in color.

Add the vanilla and beat another minute. Add eggs one at a time, beating after each addition and scrape down the sides of the bowl.

Add the flour mixture and beat at slow speed until the dough comes together. Add the chocolate chips and toffee pieces, and beat another minute.

Place parchment paper on a baking sheet. Divide the dough into two logs. Shape them evenly.

Bake for 30 minutes in a 350-degree oven. They will seem soft, but they will firm up when cooled. Allow to cool completely. Slice with a sharp knife and transfer to a baking sheet, cut side down and bake in a 350 degree oven for 8 to 10 minutes. Cool completely.

Makes about 40 biscotti.
